Traditionally and naturally, Sake has been serving as a significant liquid of purity and ablution. It has been believed deeply related to various natural God and Goddess of Japanese ancientory culture, especially in a sense of agricultural fat and rich harvest.
In a traditional Japanese wedding ceremony, both the groom and bride are offered Sake as their marital testimony in front of their family members and friends, and also those Gods and Goddesses ceremonially.
As Sake is made of rice, a grain, it needs to go for a bit complicated method of fermentation, that is more like beer making process than that of wine.
Here is the precious video published by Shimizu-no-Mai brewery, that briefly but completely covers the general process of Sake fermentation.
